Found another one of those ''cooking gems'' this time from the Manica Post which after a long tie seems to be up and running.....not that great but at least it is working......still trying to figure out who is going to make this Chocolate cake with all the electricity that is needed and all those rather posh ingredients......well seeing as the Manica Post is all part and parcel of the zanu pf mafia mouth piece I suppose it is aimed at the ''gravy train'' riders.......lol

HELLO brothers and sisters!

You might be wondering why I mentioned our dear brothers in our column sisters — some brothers complained my giving preference to one specie of men leaving out the other in the now gender-equal community.

Brothers I do apologise for that.Easter is now with us and as we celebrate the crucification and resurrection of our Lord we have to do it with some cake and classic scones on our tables.

This week we are baking chocolate cake and some classic scones.
Here is a very easy to make chocolate cake recipe. It may be easy, but don't let that fool you. It still tastes great!

Ingredients:

2 cups flour
1 ½ teaspoon baking powder
4 tablespoons cocoa
1 cup sugar 1 ½ teaspoons baking powder
Sift the above ingredients together.
1 cup miracle whip or mayonnaise (can be homemade)
1 cup water
1 tablespoon vanilla

Directions:

Mix the miracle whip or mayonnaise and water together.

Add vanilla.

Stir in dry ingredients until smooth.

Bake at 350 degrees for 30 to 40 minutes.

Cool.


Classic scones

Ingredients·


2 cups all-purpose flour ·
2 tsps baking powder
5 tbsps chilled butter or margarine / cut up·
1/2 cup milk or 1/2&1/2, or light cream ·
1/8 tsp salt ·
1/4 cup sugar/substitute 3 sweet 'nlow for diabetics·
1 large egg·
1 tsp vanilla·
1/4 cup currants (optional) ·
1 egg mixed with 1 tsp water for glaze instructions·

Pre-heat oven to 425 degrees·

Grease baking pan or cover with parchment paper.

In food processor mix dry ingredients.

Sprinkle diced butter on flour mix/turn processor on and off 14 times or use 2 knives scissors fashion, cut in butter until mix resembles course crumbs·

Small bowl stir tog. vanilla, 1 egg, milk and currants (optional) ·

Add milk mix to flour mix ·

Stir only to combine.

Floured hands, make ball·

Lightly floured pastry board, pat dough into 8" diameter circle ·

Brush with egg glaze ·

Cut into 8 - 12 wedges or 3" rounds (I prefer 8).

Place on baking sheet ·

Bake 12 - 14 minutes (or until browned)·

Cool on wire rack·

Freeze well·

Do not heat in microwave.

Use oven or toaster oven.
